Bohemian Wurst started the same way a lot of good ideas do: in a Biergarten.

I spent over 10 years cooking at the Bohemian Biergarten, in Boulder, Colorado. Including the final three years as the Executive Chef. In 2022, the food truck was born as an extension of the restaurant—a way to take our bratwursts, pierogies, and bier-hall spirit beyond the walls and out into the world. After years of living and breathing that food, I had the chance in 2025 to buy the truck and take the whole thing on the road myself. Same recipes, same heart… just fewer walls and a lot more miles.

Before stepping into the Executive Chef role, I started as a dishwasher, and climbed my way up the company ladder. I was a sous-chef under three different executive chefs from three different European countries. That meant learning a lot of techniques, traditions, and strong opinions about how food should be done—all of which helped shape how I cook today.

Along the way, I was lucky enough to be featured on the Food Network’s Diners, Drive-Ins, and Dives, cooking for Guy Fieri (yes, the hair is real, and yes, it was awesome). I’ve also been featured in several local newspapers and publications, which is still feels pretty wild to me, a kid who grew up in Longmont, Colorado.

These days, Bohemian Wurst is about bringing great food, good vibes, and a little slice of Biergarten atmosphere wherever I park. From breweries to festivals to street corners, I’m proud to serve "The Best 'Wurst in Town!"
